Dear Colleagues,

Welcome to this virtual online conference, an exclusive meeting dedicated to the latest developments in scientific research in the field of nutrient research, with a focus on innovations for health and sustainability. This conference aims to serve as a multidisciplinary platform for the exploration of innovative research and advancements in nutrient science. Emphasizing both macro- and micronutrients, the conference will delve into novel methodologies for nutrient extraction, bioavailability, and functional food development. Analytical techniques such as metabolomics, proteomics, and nutrient profiling will be discussed in the context of their application to food safety and quality. As the global search for healthier and more sustainable diets intensifies, the role of nutrients and lifestyle modification are at the forefront. For a healthier and more sustainable diet, it is clear that most people will need to incorporate more plant-based foods into their diet. Moreover, as we strive to feed a growing world population, the role of plant-based foods becomes increasingly critical. The aim is to explore the effectiveness of using plant-based nutrition as a primary approach in preventing, suspending, and even reversing chronic diseases. Furthermore, the conference aims to foster dialogue on the critical intersections between nutrient science, public health, and sustainable food systems. Our collective goal is to challenge existing scientific paradigms, broaden the scope of research, and contribute to an integrated approach where innovation, health, and sustainability coexist harmoniously.

Prof. Francesco Visioli

Department of Molecular Medicine, University of Padova, 35121 Padova, Italy;
Francesco Visioli is Professor of Human Nutrition at the Department of Molecular Medicine of the University of Padova (Italy). His research ranges from in vitro studies of bioactivity (test tubes, cell cultures) to in vivo tests, performed on laboratory animals and/or humans. Dr Visioli has a publication record of more than 400 papers and book chapters, which have been cited over 17,000 times. Francesco Visioli has been studying natural compounds since 1993, in a pharma-nutritional framework.

Dr. Agnieszka Micek

Statistical Laboratory, Faculty of Health Sciences, Jagiellonian University Medical College, 31-126 Kraków, Poland;
I completed master's and doctoral studies in mathematical sciences (discipline: mathematics) and next I got the habilitation in medical and health sciences (discipline: health sciences). I am an academic teacher. I have an experience in collaboration with some healthcare institutions in Poland for example Agency for Health Technology Assessment and Tariff System (AOTMiT), a public HTA institution, which supports the decision-making process in the healthcare system; Arcana Institute (INAR), one of the oldest companies in Poland offering support for reimbursement dossier development. As a member of a research team I collaborated in international projects implemented by the Department of Epidemiology and Population Research, Jagiellonian University Medical College, such as: CHANCES Consortium on Health and Ageing Network of Cohorts in Europe and the United States (2014-2015), EUROASPIRE IV European Action on Secondary Prevention through Intervention to Reduce Events. (2015-2016), ATHLOS Ageing Trajectories of Health: Longitudinal Opportunities and Synergies. Program: HORYZONT 2020 (2016-2017), HAPIEE Health, Alcohol and Psychosocial factors In Eastern Europe as well as in WOBASZ II study Multi-centre National Population Health Examination Survey. I was a manager or contractor of several grants received from the National Science Center (NCN), a Polish government agency, for example Uniqueness and strong uniqueness of minimal extensions – in the field of mathematics during my PhD studies and Assessment of the association between polyphenol consumption and cognitive status in the discipline of health sciences. My research focuses on influence of dietary habits on human health. I am working on the evidence synthesis aimed to develop research in the field of nutrition with special regard to impact of polyphenols on cardiovascular and metabolic disease and cancer.

Dr. María Dolores del Castillo

Department of Bioactivity and Food Analysis, Instituto de Investigación en Ciencias de la Alimentacion (CIAL) (CSIC-UAM), 28049 Madrid, Spain;
Dr. M. Dolores del Castillo is a Research Scientist in the Spanish National Research Council (CSIC), the largest public institution dedicated to research in Spain and the third largest in Europe. She received her PhD in Food Science and Technology at Complutense University of Madrid, Spain in 1999. In 2004, Dr. del Castillo was appointed as Tenured Scientist at CSIC and as Research Scientist in 2009. Since 2011, she is Head of Food Bioscience Laboratory at the Institute of Food Science Research (CIAL), a research institute belonging to CSIC and the Autonoma University of Madrid (UAM).

Prof. Dr. Sonia González Solares

Department of Functional Biology, University of Oviedo, 33006 Oviedo, Spain;
Sonia González Solares is PhD in Biology and Professor at the University of Oviedo, Spain. Since 2001 she has been conducting research in the field of nutrition focusing on the impact of dietary antioxidants on survival in the elderly. In recent years, more focus has been placed on the impact of diet on health in different physiological and pathological states through different biomarkers, with special emphasis on the intestinal microbiota. She is the author of some 90 indexed publications with an h-factor of 29 and several book chapters.

Prof. Enette Larson-Meyer

Virginia Polytechnic Institute and State University, Blacksburg, VA 24061, USA;
Enette Larson-Meyer, PhD, RD, CSSD, FACSM, is a professor at Virginia Tech where she directs the Nutrition and Exercise Metabolism (NEM) Laboratory. Her research focuses on how nutrition influences the health and performance of active individuals at all stages of the lifecycle and at all levels of performance. Recent research interests include healthy weight gain in athletes and the importance of micronutrient status in sports/exercise performance and overall health. Enette has authored over 100 scientific articles and book chapters, is the author of “Plant-Based Sports Nutrition” (Human Kinetics, 2020), and has served on several International Olympic Committee (IOC) consensus panels. She is an Associate Editor for Medicine & Science in Sports & Exercise and the Science and Medicine of Football, and is on the Faculty for the IOC Sports Nutrition Diploma. Her personal interests include road cycling, flat water kayaking, Irish Step dancing, resistance training, gardening, yoga, cooking and wine tasting. She is the proud mother of three recent college graduates, two of whom played collegiate soccer.
